Industry have been very industrious of late, creating an incredible café as an extension of the store. It is not fancy. Nope. It reminds me of 101 Cookbooks, the site where a really healthy lady throws a combination of healthy, tasty veggies and grains into a bowl, adds some sort of vaguely exotic ethnic dressing, and somehow creates a taste sensation. She then says ‘use up whatever YOU have in your fridge’, and totally warily, you do, and it’s amazing. That’s the kind of thing Industry is serving up. Carrot ribbons and lentils, burnt aubergine, yogurt, and pomegranate, blushing tomato salads. Cramming nuts, vegetables, herbs and spices into a little lunchbox, like the earth mother you never had. It’s not loaded with oils, but subtle and refreshing, which is a relief for many the salad lover who actual enjoys god’s earthly flavouring, but hates spending hours julienning courgettes. / Kate Coleman
